- 20 ounces of canned crushed pineapple (Reserve the Juice)
- 3 cups of chopped and peeled rhubarb
- 1/2 cup of white sugar
- 1/2 cup of brown sugar
- 1 package of strawberry Jell-O
- 2 cups of mini marshmallows
- 1 package of white cake mix
Mix together the sugar, brown sugar, pineapple, marshmallows, gelatin and rhubarb in a medium sized bowl. Pour this mixture into the bottom of a cake pan making sure it is evenly spread.
Now in a different bowl make the white cake mix using the pineapple juice as a substitute for water. You may not have enough juice to replace the water but substitute as much as you can. Pour this white cake mix over the top of the fruit making sure to spread this layer evenly as well.
Place the cake pan into a 350 degree preheated oven and allow to bake for about 1 hour. To make sure it is cooked insert a toothpick into the center of cake and if it comes out clean then dessert is ready.
Allow the cake to cool for a little while before inverting it onto a serving plate and serving with cream.
